Lecithin (/ ˈ l ɛ s ɪ θ ɪ n, ˈ l ɛ s ə θ-/, from the Greek lekithos 'yolk') is a generic term to designate any group of yellow-brownish fatty substances occurring in animal and plant tissues which are amphiphilic – they attract both water and fatty substances (and so are both hydrophilic and lipophilic), and are used for smoothing food textures, emulsifying, homogenizing liquid. The beautiful macadamia tree is the source of expensive but richly flavored nuts prized for their sweet, soft meat. These trees are warm region plants only, but growing macadamia nuts in southern California and other areas with tropical climates is possible.
